Making Almond Turnovers

Making Almond Turnovers

Step 1 - At “Nick the Dutch Bakers” we use a recipe with “Batavia” cinnamon.
















Step 2 - Nicoline uses the reversible sheeter to roll out the dough to the desired thickness.
















Step 3 - Cutting the bottom of the almond turnovers.
















Step 4 - You have to be fairly gentle otherwise your cookie dough will break.
















Step 5 - Having big hands does make the work easier to do.
















Step 6 - Nick fills the cookies with almond paste.




















Step 7 - Almond paste is made from California almonds. As you can see the centre of the cookie is soft.
















Step 8 - Lastly we brush the almond turnovers with egg wash for a nice shine.
















We then freeze them unbaked and bake them for you each Saturday at the Farmers Market.

Getting Ready For Farm Market Day

From time to time, we are going to feature a special report on how our local Moncton Farmer's Market Vendors get ready for Saturday's market day.

Here is Nick the Dutch Baker making his Rumball specials.

Nick The Dutch Baker and his family of helpers spend a large part of their week getting ready for the Saturday market.

It starts with a little dough and some creativity. Here's a pictorial of getting "RumBalls" ready to melt in your mouth.

There are hours of preparation invested in creating baked goods that create the moment of great taste and product experience at the Farmer's Market.

Once at the market, the Dutch Baker's Rumballs will find a good home as a fresh, tasty Baked Goods delight.

The Final Step Is: You Step Up and Purchase: The baking process is complete and now it is for customers to step up to the Baker's Display rack at the Farmers Market booth to take home one or several of these Chocolate Dipped Goodies for yourself.

Dutch Baker Adds New Flax Bread Product


Nick the Dutch Baker, a vendor at the Moncton Farmers Market has introduced another new bread product that is focused on those interested in adding the benefits of flax flour to their bread diet.

Flax Seed Bread and Your Health

Many consumers eat “Flax Seed Bread” for its pleasant taste.

Freshly ground flax seeds have a slightly nutty flavor. But taste is not the only reason that people are turning more and more to Flax Seed Bread. Flax seed has many health benefits. It is a good source of Omega-3 fatty acids.

· Omega-3 (Linolenic Acid) works to control cholesterol, regulate the cardiovascular, immune, digestive and reproductive functions.
· There is solid evidence that eating ground flax significantly reduces blood cholesterol, which could lower incidents of heart disease.
· Flax, which is high in fiber, has also been linked to preventing colon cancer.
· Flax is believed to reduce blood pressure and mortality from stroke related events.

At Nick the Dutch Baker we use flax seed from Western Canada (Manitoba).

It contains 38 to 43% oil of which 52 to 62% is A.L.A. which stands for Alpha Linolenic Acid (Omega-3).

Because flax seeds do not get digested when they are whole, they must be ground to get the full benefit. We grind our flax seed the very day we make bread from it. It is always freshly ground! Guaranteed!
